In short: Because Sunday is Resurrection day, and Sunday Mass is the foundation everything else in Catholic life sits on. CCC 1166

By a tradition going back to the apostles, from the day of the Resurrection itself, the Church celebrates the Paschal mystery every seventh day, the Lord’s Day. CCC 1166

The Sunday Eucharist is “the foundation and confirmation of all Christian practice.” CCC 2181
